Candied, crystallised, caramelised magic – there are some seriously sweet things you can do with Selati sugar.
When it comes to entertaining, you can turn almost anything into sweet sophistication with a little Selati sugar. It works particularly well in the two recipes you’ll find below: classic French palmiers with an orange zest twist, and candied citrus, because even your drink deserves that magical finishing touch over the festive season.
Palmiers, also sweetly referred to as palm hearts, are French pastries and pure pastry alchemy. Sugar meets butter-laden puff pastry and, when baked, the granulated Selati sugar doesn't merely melt, it crystallises and caramelises into a golden, sometimes amber, stained glass-like layer.
When bitten, they shatter, proving that sometimes elegant entertaining requires nothing more than sugar's natural tendency to create magic.
Citrus palmiers
Beautiful and delicious – who knew palmiers are so easy to make? We added citrus sugar for a zesty twist, then dipped them into dark chocolate because everyone knows orange and chocolate is a match made in heaven. Save this recipe for the next time you have puff pastry languishing in your freezer.

And the finishing touch: candied orange peel because, once again, the most enchanting culinary transformations often only require a little extra time in the kitchen, and a little something sweet!
Candied citrus
To really impress your guests this festive season, why not make candied citrus peels and slices? You can use oranges, or whatever citrus you have available. Simmer in a sugar syrup, then bake until they’re dry and sticky. Use the candied citrus to garnish welcome drinks.
