This quick pork stir-fry will soon be your new midweek favourite

Whether it’s a tender pork fillet to roast in the oven for Friday night tacos, a delicious stuffed loin to enjoy over a lazy Sunday lunch, or a quick and fragrant stir-fry for the perfect weeknight supper, you can’t go wrong.
Hot tip: if you’ve got a stir-fry in mind, ask your butcher to cut strips from the pork leg and to cut against the grain for an extra-tender bite of meat.
SERVING SUGGESTION:
For a quick pork stir-fry, toss 500 g pork stir-fry strips in salt and pepper. Heat 2 t vegetable oil in a wok until smoking hot, then toss the pork with 1 t sesame oil, 3 cloves finely chopped garlic, 1 x 3 cm piece finely chopped ginger and 2 t smoked chilli flakes. Stir-fry for a few minutes until the meat is almost cooked through. Remove and set aside. Add 1 t sesame oil to the wok and fry 4–6 cups thinly sliced colourful veggies until almost cooked. Return the meat to the pan. Add 75 g roughly chopped giant salted peanuts, 1/3 cup soya sauce and 500 g cooked egg noodles. Stir-fry for another minute, then serve immediately. Serves 4
