Virtually guilt-free chocolate treats to help you avoid FOMO this Easter
Your loved ones are stocking up on enough chocolate eggs and bunnies to feed a small army, and you’re wondering how you’ll be able to resist. With these less-sugar cocoa creations. That’s how.
Wheat-free, low-sugar brownies
The only added sugar in these gooey baked goodies is in the dark chocolate chips. Go for a good-quality dark chocolate with a high percentage cocoa. Preheat the oven to 180°C. Mix 200 g rye flour, 60 g psyllium powder, 120 g cocoa, 200 g xylitol and 2 t baking powder in a large mixing bowl. Add 6 free-range eggs, 2 cups apple sauce, 6 T coconut oil and 200 g chopped dark chocolate and mix to form a batter. Pour the batter into a greased 19 cm x 29 cm ovenproof dish. Bake for 15 minutes, or until a skewer comes out with large, dense crumbs attached to it after being inserted. Allow to cool, then spread with 250 g almond butter over the brownie before cutting into squares.
Wheat-and gluten-free raw cheesecake bars
Line a 27 x 20 cm deep rectangular baking tin with clingwrap. Using a food processor, process 200 g ground almonds, 12 dates, 120 g dessicated coconut and ½ cup coconut oil until it forms a paste. Press into the tin and freeze for 20 minutes. Mix 500 g cream cheese and 450 g White Rock Full Fat semi-soft cheese. Using a spatula, evenly spread the cheese mixture over the base. Freeze for another 20 minutes. Melt 300 g good-quality dark chocolate, pour over the cheese base and return to the freezer for 10 minutes, or until the chocolate has set. Cut into bars.
Pecan-and-cream cheese chocolate balls
Hard to believe, these creamy cocoa rounds are made without any chocolate or sugar. Try for yourself and see. Place 1 cup full-cream cheese, 75 g good-quality cocoa powder and 2 T xylitol in a mixing bowl. Using a silicon spatula or wooden spoon, mix the ingredients together until combined. Roll into 10 equal sized truffles, then roll in some extra cocoa and 50 g toasted and roughly chopped pecan nuts.
