Lemon and grapefruit make a mean marinade

The citric acid in these citrus fruits will soften, moisten and flavour the chicken pieces. Allow the chicken to marinate for one hour for maximum flavour. Placing slices of lemon right under the skin of the chicken injects a lemony punch of flavour straight into the flesh. Fennel and orange are flavour friends

The tang of the orange zest and juice is grounded by the earthiness of the fennel making for all-round amazing flavour. Thinly slice 1 fennel bulb, then place the fennel, 2 crushed garlic cloves and 2 thinly sliced orange rinds into the roasting pan along with the whole chicken.
