4 midweek meals with mince

If we’ve said it once, we’ve said it a million times – there’s no harder-working ingredient than the humble packet of beef mince. Be it Bolognese, cottage pie or meatballs, beef mince consistently wins dinner, and the whole family, over. As much as we love it, however, there will come a time that you will tire of the same old recipes. For those times, here are 4 new midweek beef mince winners.

Mexican bake

Right, so you’re tired of spag bol, what’s next on your go-to list? We’re guessing it’s something of a chilli con carne-inspired dish. Well, here’s a way to take that to the next level – by layering it with cheese and baking it in the oven.

This curry might take a bit longer to cook than your usual midweek dinner, but the hands-on time is fairly minimal. A great all-round, crowd-pleasing dinner.

Lamb-and-brinjal mince

While this might call for lamb, this recipe would work just as well with beef mince. Something of a mash-up between Bolognese and moussaka, this could be enjoyed just as well on mashed potatoes or even over pasta.
