Trout-and-grapefruit crudo

Curing trout in grapefruit makes for a light and refreshing summer dish.
Ingredients
Method- 400 g Woolworths Lightly Smoked Rainbow Trout, cubed
- 1 grapefruit, cut into segments
- mint, to garnish
- coriander, to garnish
- sesame seeds, toasted, to garnish
- limes, for serving
- For the soya-and-ginger dressing:
- 4 T soya sauce
- 4 T rice vinegar
- 4 T fish sauce
- 1 t fresh ginger, minced
Method
Ingredients1. Place the fish onto a platter and drizzle over the dressing. Garnish with the mint, coriander and sesame seeds and serve with the limes.
