Lello’s mortadella, pistachio and burrata panino

- 2 squares focaccia
- 4 T extra virgin olive oil
- a few spoonfuls Lello’s 100% pistachio paste (or make your own, see cook’s note)
- 300 g mortadella, very thinly sliced
- 2 burrata balls
- Maldon salt,to taste
Method
Ingredients
1. Slice the focaccia in half and drizzle both sides with extra virgin olive oil. Spread a spoonful of pistachio paste onto the focaccia.
2. Fold the mortadella in layers, place onto the focaccia and top with a ball of burrata. Drizzle over another dollop of pistachio paste and sprinkle with salt. Top with the remaining piece of focaccia and serve.
Cook’s note: To make your own pistachio paste, blend 300 g shelled, roasted pistachios, sea salt to taste, and enough extra virgin olive oil to loosen the mixture until a thick paste forms. Allow the burrata to stand at room temperature for about 30 minutes before using. This allows for a better flavour and eating experience.
