- 400 g Woolworths plain South African feta cheese
- 1 cup canola oil, for frying
- 240 g cake flour
- 50 g spring onions
- salt, to taste
- 250 g Woolworths exotic tomatoes, cut into chunks
- lemon wedges, for serving
Method
Ingredients
1. Place the feta squares in an ice bath for 10 minutes to firm up.
2. Heat the canola oil in a nonstick pan over a high heat. Dust the feta in the flour and carefully place into the oil. Fry in batches if necessary.
3. Fry on both sides until golden brown – about 5 minutes. Drain on kitchen paper.
4. Char the spring onions in the slightly cooled oil for 3 minutes. Drain on kitchen paper and season with salt.
5. Arrange the ingredients a large and serve lemon.
