These pork loin ribs are made for the braai – smoky, juicy and glazed until finger-licking good. They’re simple to prepare but feel indulgent, especially when served with bold, crunchy sides. A great option for relaxed entertaining where the fire does most of the work.

Ingredients

Method
  • 1 kg  Woolworths Sweet & Stick Pork Loin Ribs
  • To serve:

  • 4 sweetcorn cobs
  • 3 mixed peppers
  • 80 g Woolworths Medium Fat Butter with Garlic & Herbs
  • 250 g Woolworths Deli-Style Potato Salad
  • 160 g Woolworths Crunchy Asian-Style Slaw
  • 250 g Woolworths Smoky Four-Bean Salad

Method

Ingredients

1. Light a braai fire or preheat the oven grill. Cook the spare ribs according to package instructions for 15–18 minutes, or until caramelised and tender. Turn the ribs occasionally and base frequently with the marinade.

2. Lightly brush the sweetcorn and peppers with oil and braai or grill until charred. Transfer to a serving dish and place knobs of garlic and herb butter on the hot sweetcorn.

3. Rest the ribs for 10 minutes before slicing and serving with the sides.

Cook’s note: Baste the ribs little and often towards the end of the cooking time for maximum stickiness without burning.
