The TASTE team recently visited a sweet potato farm in Malmesbury, north of Cape Town, and learnt all about the different varieties available at Woolworths. They thrive in the sandy soil and warmer weather here in summer.

Here’s what you know:

PURPLE: Purple-skinned sweet potatoes with white flesh are sweet and delicious baked or roasted; while the purple-fleshed ones are slightly more savoury with a creamy texture.

ORANGE: Purple-skinned sweet potatoes with orange flesh are slightly sweeter and contain beta-carotene.

WHITE: White-skinned sweet potatoes with white flesh are delicately nutty with a smooth, buttery texture.

Woolworths is harvesting a new sweet potato – and you’ve never tasted one quite as sweet as this before.

The Flavourburst™ sweet potato has bright purple skin and is considered twice as sweet as the sweetest sweet potato you know, which would likely be the orange variety.

They're ideal for baking and roasting – the outside caramelises beautifully while the white flesh becomes creamy and turns bright yellow in colour when cooked.

The result: A sweetness you'd never expect from a vegetable. In fact, they're so sweet, we balanced them by adding miso butter, and turned them into a whole meal with a four-cheese masterpiece.
