40 minutes1 Heat the oil in a large frying or paella pan. Add the onion and slowly cook over a low heat until soft. Add the pepper and chorizo and cook for 3 minutes.
2 Add the rice, spice mix and saffron and cook for 1 minute. Add the garlic, tomatoes, tomato paste and stock. Simmer for 20 minutes or until the rice is just cooked.
3 Add the chicken, cover and simmer for 10 minutes. Add the seafood and cover, cook for 4 minutes. Serve with parsley and lemon wedges.
Cook's note: The basic spice mix is versatile! Add any other Woolworths spices to zhoosh up the flavour. Here, we used Woolworths saffron and cajun seasoning.
