Hi Roger, my hubby makes a mean smokey burger by flame grilling the patty (which is 80/20 mince, salt & pepper – nothing else), hickory wood chips on the fire, flame grills the bacon and adds a little liquid smoke (also hickory flavoured) to his mayo…. I hope this helps!

Besides cooking it over a wood fire? Try adding a bit of smoked paprika to the patties. If your have them often and are happy to experiment try liquid smoke. Woolworths online sells Lazy Kettle Hickory Liquid Smoke. Just add a bit to the patties.

Hi Roger – I know that the best way to get juicy burgers is to NOT use lean mince. The more fat, the juicier the patty! I also add Worcestershire sauce to the mince for extra flavour.
