How to rule the roast
Chicken out of roasting your own bird and save time with a succulent store-bought one instead. It’s delicious with salad, sandwiched with mayo, or reinvented in everything from cheesy quesadillas to a tangy Vietnamese-style slaw.
5 OF THE BEST RECIPES WITH ROTISSERIE CHICKEN
Quick chicken broth
Serves 4
Bring 1 free-range rotisserie chicken carcass and 5 cups of water to a simmer. Skim, if necessary. Add 1 roughly chopped onion, 2–3 roughly chopped carrots, a handful roughly chopped celery leaves , a handful roughly chopped parsley, 1 t salt and 1 tomato. Simmer, covered, for 1 hour. If you need to intensify the flavour, reduce over a high heat. Check the seasoning, then strain and use to make a soup.
“Make a rich stock using the rotisserie chicken carcass and add a few boldly flavoured ingredients to make one of these four light and wholesome soups.”
CHICKEN, CHILLI AND AVOCADO SOUP
Heat the strained broth with 1 finely chopped and seeded fresh chilli. Stir in 3⁄4 cup shredded free-range rotisserie chicken breast and heat through. Remove from the heat and add thinly sliced avocado, the juice of 1–2 limes and coriander leaves. Check the seasoning and add some crisply fried tortilla strips. (pictured above)
CHICKEN, VEGETABLE AND NOODLE SOUP
Add 1–2 finely chopped carrots and 1–2 sticks finely chopped celery to the strained broth and simmer for 15 minutes or until tender. Stir in 3⁄4 cup chopped free-range rotisserie chicken and a handful drained, cooked fine noodles. Heat through and check the seasoning.
CHICKEN-AND-RAVIOLI
SOUP Simmer 250 g ravioli (Woolworths’ butternut pansotti is good) in the strained broth until tender. Check the seasoning. Ladle the pasta and broth into bowls and pass around the Parmesan at the table.
SPINACH-AND-FETA SOUP

Cook's note: Woolies rotisserie chickens are grain fed and basted with real butter. They have a shelf life of only four hours on the hot-foods counter, so are as fresh as you expect them to be – Carol Weideman, Woolies product developer.
