Method Place 100 g flour on a working surface and make a well in the centre. Season with salt and add a drizzle of olive oil.Step 1Crack 1 large egg into the centre of the well and incorporate the egg into the flour using a fork. Step 2Once all the egg has been incorporated, start kneading the mixture to form a dough. Cover with clingwrap and place in the fridge to rest for 30 minutes.Step 3Roll out by hand or using a pasta roller, then roll into a sausage shape before cutting into the desired shape, depending on the dish you’re making.Step 4Boil in salted water for 3 minutes, or until al dente, before tossing with a sauce.
