Lightly smoked trout with dill and sesame-seed brittle

Ingredients

  • 100 g white sugar
  • 2 T white sesame seeds
  • 1 side lightly smoked trout
  • 3 T chopped fresh dill
  • Maldon salt, to taste
  • Rye bread, for serving

Method

Place the sugar in a saucepan over a low heat until it has melted. Continue to cook on low heat until the sugar turns into a light caramel. Add the sesame seeds, stir through and pour onto greaseproof paper or a Teflon sheet.
Allow to cool, then break into pieces. Sprinkle the trout with the chopped dill and Maldon salt, to taste. Wrap the fish in greaseproof paper and serve with rye bread and the sesame brittle.
