25 minutes1. Heat the olive oil in a saucepan and sauté the onion and garlic until soft. Stir in the ’nduja paste and cook until fragrant.
2. Add the tomatoes and stock. Simmer for 10–15 minutes until slightly reduced. Add the prawns and mussels, cover and simmer gently until heated through, about 5–7 minutes. Season to taste.
3. Toast the ciabatta in the butter until golden. Serve the stew with the toasted ciabatta, Parmesan and celery leaves.
Cook’s note: You can use sourdough or baguette if ciabatta isn’t available – just don’t skip the toasting step!
