  • 170 g can Woolworths light meat tuna solid in brine, drained
  • 2 t coconut milk 
  • 1 T lemongrass
  • Zest of 1 lime
  • 2 free-range eggs
  • 2 slices white bread, roughly torn into small chunks
  • 20 g fresh coriander, chopped
  • 80 g panko breadcrumbs
  • oil, for frying
  • Woolworths Crunchita™ lettuce leaves, for serving
  • Woolworths pickled red onion petals, for serving
  • 1 Mediterranean cucumber, shaved
  • mayonnaise, for serving
  • Fresh micro herbs, for serving

  • Woolworths light meat shredded tuna in brine
  • crème fraîche
  • cream cheese
  • Woolworths Asian chilli Szechuan pepper oil, for serving
  • sesame seeds, for serving

  • 1 Woolworths baguette, sliced and toasted
  • 4-6 roasted red peppers
  • 100 g Woolworths Mediterranean vine tomatoes, roasted
  • 70 g Woolworths pitted green olives with basil and garlic
  • 180 g jar Woolworths albacore white tuna fillets in olive oil

Method

Ingredients

Mini fish cakes (Makes 12)

1. Mix tuna, coconut milk, lemongrass paste, lime zest, eggs, bread slices and coriander. Shape according to your liking and then roll in panko breadcrumbs.

2. Fry for 5 minutes until golden brown.

3. Serve in a lettuce leaf, topped with pickled red onions, shaved cucumbers, mayonnaise and fresh herbs.

Tuna pâté

1. Mix tuna in brine, crème fraîche, cream cheese. Mix until smooth.

2. Top with Asian chilli Szechuan pepper oil and sesame seeds.

3. Serve with, fresh herbs, lime wedge and crackers.

Tuna crostini

1. Toast baguettes slice, and serve with roasted red peppers, roasted tomatoes, and olives. Top with albacore white tuna fillets in olive oil. Serve.
