Ingredients

- ¾ cup mezcal
- ¼ cup tequila
- 1⁄3 cup Carpano Antica Formula vermouth
- ¼ cup house-made dark cherry liqueur (a blend of Cointreau and dark cherry juice)
- 4 drops vanilla extract
- ¼ cup fresh orange juice
- 1½ T fresh lemon juice
- ice, for shaking
- 4 cherries, to garnish
Method
Ingredients
1. Place the mezcal, tequila, vermouth, cherry liqueur, vanilla, orange juice and lemon juice into a cocktail shaker. Fill with ice and shake vigorously until well chilled.
2. Strain into 4 martini glasses. Garnish each glass with a cherry on a cocktail pin.
Pairing: Top a bite-sized cube of 10-month-aged white Cheddar with a green olive and an anchovy fillet. Secure with a cocktail skewer.
Cook’s note: The smoky mezcal balances beautifully with the salty, umami punch of the canapé.
