Baby marrow-and-ham slices

Your kids will never guess this recipe is loaded with goodness! From the baby marrows to the meat, cheese and yoghurt, this one hits all the right notes in one delicious slice. Add a few other essentials, such as water and fruit, and lunch is sorted.

Ingredients

Method
  • 4 free-range eggs
  • ½ cup double-cream plain yoghurt
  • 4 baby marrows, grated (squeeze out excess liquid)
  • 100 g Woolworths smoked gypsy ham or chicken, chopped
  • ½ cup Gouda cheese, grated
  • 30 g self-raising flour
  • sea salt and freshly ground black pepper, to taste

Method

Ingredients

1. Preheat the oven to 180°C. Line a 20 × 25 cm baking tray with baking paper and grease lightly.

2. Whisk the eggs and yoghurt together until smooth.

3. Add the baby marrow, ham, cheese and flour. Season lightly and mix well.

4. Pour into the prepared tray and smooth the top.

5. Bake for 25–30 minutes until golden and set. Allow to cool completely, then cut into slices.

Cook's note: suggested snacks to add to lunchbox:

  • Mini chicken kebabs
  • Cheese strings
  • Fruit cup or fresh grapes
  • Water
