Ingredients

Method
  • 6 calamari steaks
  • 4 t miso paste
  • 1/2 cup vegetable oil
  • 3 T soya sauce
  • 2 heads Woolworths Romaine lettuce
  • 1 lemon, zested and juiced
  • coriander, to garnish
  • 2 x 135 g punnets baby corn
  • For the salad dressing, mix:

  •  1 T, plus 2 t sesame oil
  •  1⁄2 cup, plus 2 T canola oil
  • 2 t rice wine vinegar or mirin
  • 3 T brown butter
  • 1 lemon, zested and juiced

Method

Ingredients

1. Score the inside of the steaks. Mix 2 t miso paste, 2 T oil and 2 t soya sauce. Baste the calamari in this mixture.
2. Cook the calamari over a very hot fire for 2 minutes on each side until soft but not rubbery. Slice very thinly.
3. Mix the remaining oil, soya sauce and miso paste and dress the corn in this mixture. Braai for 4 minutes on each side over a very hot fire, turning often.
4. Slice the corn and shred the lettuce over the calamari before serving. Drizzle over the dressing and garnish with coriander.
