Cheese toasties: 3 ways

Making cheese toasties before loadshedding is quick and easy using Woolies’ range of grated cheeses, including mature Cheddar, Gouda, mozzarella and Emmental. Ingredients

Method
    For the Caprese toasted cheese sandwich:

  • 4 Woolworths Bake At Home ciabatta bread
  • 2 T basil pesto
  • 3 T Antipasti sundried tomato quarters, finely chopped
  • 100 g Woolworths grated mozzarella cheese
  • 100 g cherry tomatoes, halved
  • salt, to taste
  • 1 T olive oil
  • 2 T butter
  • For spicy chicken toasted cheese sandwich:

  • 4 slices Woolworths Rustica bread, sliced diagonally
  • 2 T Woolworths onion marmalade with mustard seeds
  • 1 Woolworths smoked chicken breast, sliced
  • 50 g Woolworths pickled jalapeno rings
  • 100 g Woolworths grated Emmental or grated Emmental and Mature Cheddar
  • 1 T olive oil
  • 2 T butter
  • For the garlic butter toasted cheese with harissa:

  • 4 thick slices farm-style bread
  • 2 T Woolworths harissa paste
  • 2 T Woolworths pickled red onion petals
  • 100 g Woolworths grated mature Cheddar
  • 1 T olive oil
  • 2 T Woolworths medium fat butter with garlic & herbs

For the Caprese toasted cheese sandwich:

1. Spread the basil pesto onto 2 slices of bread, and the sundried tomatoes on the remaining 2 slices.

2. Generously top the pesto with mozzarella, cherry tomatoes and season. Place the sundried tomato-topped bread on top to close the sandwich.

3. Heat the oil and butter in a pan over a medium heat. Add the sandwich and allow to brown for 3 minutes, then turn over and toast the other side for a further 3 minutes, or until the bread is golden and crisp and the cheese has melted.  Cover the pan with a lid to help the cheese melt if necessary.

For spicy chicken toasted cheese sandwich:

1. Spread the onion marmalade onto 2 slices of bread. Add the chicken and pickled jalapenos. Sprinkle over the cheese and top with the remaining slices of bread.

2. Heat the oil and butter in a pan over a medium heat then add the sandwiches. Cook for 3 minutes, pressing down gently to get a deeper, golden crust. Turn over and toast the other side for a further 3 minutes, or until the bread is golden and crisp with the cheese melted. Serve immediately.

For the garlic butter toasted cheese with harissa:

1. Spread the harissa onto 2 slices of bread, and top with the pickled onions. Generously sprinkle over the cheese and top with the remaining slices of bread.

2. Heat the oil and butter in a pan over a medium heat, then add the sandwiches. Cook for 3 minutes, or until the sandwich has toasted in the garlic butter. Turn over and cook the other side in the same manner.

Cook’s note: Adding a few tablespoons of water to the pan and covering it with a lid will create steam and melt the cheese perfectly.
