  • 100 g dark chocolate, roughly chopped
  • 100 g butter, cubed
  • 2 free-range eggs
  • 2 free-range egg yolks
  • 100 g sugar
  • 100 g cake flour
  • 4 T peanut butter
  • Smoked Maldon salt, for scattering

Method

Ingredients

Preheat the oven to 180°C.

Melt the chocolate and butter in a double-boiler, stirring, until smooth.

In a separate bowl, beat the eggs, egg yolks and sugar until light and fluffy. Fold in the flour, then add the chocolate mixture and mix. Chill for 15 minutes.

Half-fill 4 greased ramekins with the mixture, then place 1 T peanut butter in the centre of each ramekin. Top with the remaining chocolate mixture.

Bake for 8 minutes, then turn out onto serving dishes. Sprinkle with smoked salt before serving.

Cook’s note: Peanut butter. Check. Dark chocolate. Double check. Add smoked salt to this molten marvel and ecstasy is the inevitable result.
The mixture can also be made in advance and chilled, but would then require an extra 3 minutes baking time.
