Corn fritter salad

Need a budget lunch that doesn't feel like punishment. These easy sweetcorn fritters are flavoured with cheese and chives. Eat as is, or turn them into a quick salad with the addition of cucumber, avo and a citrusy-mayo dressing.
Ingredients
Method- 2 cobs supersweet sweetcorn
- 105 g cake flour
- ½ cup full-cream milk
- 1 egg
- 60 g Cheddar cheese, grated
- 1 T chives, chopped
- ½ t baking powder
- ½ t salt
- 2 cup canola oil
- ¼ English cucumber, sliced julienne
- 1 avocado, sliced For the dressing, mix:
- ½ cup tangy mayonnaise
- ½ cup mango and orange fruit juice blend
Method
Ingredients1. Char the corn and cut off the kernels. Mix the flour, milk, egg, cheese, chives, baking powder and salt. Add the corn kernels and mix through.
2. Heat the oil in a saucepan over a medium heat. Drop heaped tablespoonfuls of batter into the oil. The batter should make 20 fritters. Cook in batches until golden brown and crispy and drain on kitchen paper.
3. Layer the fritters, cucumber and avocado on a serving platter and drizzle with the dressing.
