Cottage cheese cookie dough
Is cottage cheese cookie dough worth the hype? We tested the TikTok trend and can confirm that the answer is most assuredly no! It’s no substitute for real baked cookies. We loved the cottage cheese and almond before the addition of the protein powder. If you’re not doing this for the protein content, swap it out for desiccated coconut. You could also reduce the quantity of almond flour and swap for the flour of your choice. Macadamia flour, coconut flour, or ground pistachios would all be delicious in this.
Ingredients
Method- 500 g chunky cottage cheese
- ¼ cup honey
- 1 t vanilla essence
- 250 g almond flour
- 125 g desiccated coconut or protein powder
- 60 g chocolate chips
- ¼ cup peanut butter (optional)
Method
Ingredients1. In a mixing bowl, blend the cottage cheese with a hand mixer until smooth. Add the honey and vanilla essence and mix until well combined.
2. Stir in the almond flour, desiccated coconut (or protein powder) and chocolate chips, and mix until just combined. Add the peanut butter (if using) and mix until incorporated.
3. Scoop the chilled dough into balls and enjoy as a snack. For a fun twist, you can roll the balls in additional coconut or chocolate chips.
