Cranberry bread Welsh rarebit

This is my take on the Welsh rarebit, a dish that dates back as far as the 18th century. Essentially, it’s cheese sauce slathered onto thick slices of bread. I replaced regular bread with Woolworths' gluten-free spiced cranberry loaf. No bunnies were harmed in the making of this decadently cheesy brunch special!

Ingredients

Method
  • 50 g butter
  • 2 T flour
  • 1 cup beer
  • 2 t wholegrain mustard
  • 100 g mature Cheddar, grated, plus extra for topping
  • a pinch ground nutmeg
  • 5 g fresh thyme, finely chopped plus a few sprigs
  • sea salt, to taste
  • freshly ground black pepper, to taste
  • 4 slices Woolworths gluten-free spiced cranberry loaf

1. Heat a pan and add the butter. When the butter has melted, whisk in the flour until a smooth paste, or roux, forms. Add the beer, whisking continuously, until smooth.

2. Stir in the mustard, cheese, nutmeg and thyme. Season to taste. Allow to bubble for 5 minutes, adding a touch more beer if the sauce gets too thick.

3. Turn on the oven’s grill. Place the bread in an ovenproof dish and smother with the cheesy sauce. Top with the remaining cheese and a few sprigs of thyme. Grill until golden brown and bubbling. Serve hot with an ice-cold beer.
