Ingredients

Method
  • 1 cinnamon stick
  • 2 Szechuan peppercorns
  • 3 star anise
  • 1 T green cardamom
  • 1 cup canola oil
  • 6 shallots, finely sliced
  • 4 T Woolworths Asian Everything soya sauce
  • 1 T brown sugar
  • 1 t chilli flakes
  • 200 g ramen noodles, cooked according to package instructions

Method

Ingredients

1. In a dry pan over medium heat, toast the spices until fragrant.

2. Add the canola oil and heat gently to infuse (for even punchier flavour, allow to stand at room temperature overnight).

3. Strain out the spices and return the infused oil to the pan over high heat. Fry half the shallots until golden.

4. Remove from the heat and stir in the soya sauce, brown sugar chilli flakes and remaining shallots.

5. Toss with hot, cooked noodles and serve immediately.
