A fresh new take on an old favourite, this crumbed pork Caesar salad deserves a spot on your light dinner or weekend lunch list. Quick, easy to prepare and simply scrumptious – this is one you’ll keep coming back to, time and time again.

Ingredients

Method
  • 600 g Woolworths crumbed pork schnitzels
  • 4-6 free-range eggs
  • 1 Woolworths Romaine lettuce
  • Woolworths Caesar salad dressing, for serving
  • a handful dill
  • Woolworths pickled red onion petals, for serving
  • Woolworths exotic tomatoes, for serving
  • Parmesan, grated, for serving
  • sea salt and freshly ground black pepper, to taste

Method

Ingredients

1. Air-fry or bake the schnitzels according to package instructions.

2. Boil the eggs to your liking (see cook’s note).

3. Toss the lettuce with the salad dressing. Place the salad on top of the schnitzels, then top with a boiled egg, the dill, pickled onions and exotic tomatoes.

4. Sprinkle with Parmesan and season to taste.

Cook’s Note: We recommend 6½ minutes’ boiling time for a perfectly boiled egg.
