Divine daiquiri

This is definitely about to make a comeback! The key to a good cocktail is balance and if you stick to the recipe, your cocktail is guaranteed to come out perfectly every time. So, enjoy zesty lime, caramel and vanilla notes from the rum, and a rich, spiced Syrah Grenache to complement them.

Ingredients

Method
    For the spiced red wine:

  • 3 cloves
  • 1 cinnamon stick, broken into pieces
  • 1 star anise
  • 3 pods cardamom (optional)
  • 1 cup Syrah Grenache wine
  • ⅛ t ground nutmeg
  • 3 T white sugar
  • For the cranberry syrup:

  • 1 cup Woolworths cranberry Juice
  • 200 g white sugar
  • 50 ml Bacardi Blanco rum
  • 25 ml cranberry syrup
  • ice, for shaking
  • 25 ml spiced red wine

1. To make the spiced red wine, place the whole spices in a pan and heat until fragrant. Add the wine, nutmeg and sugar and simmer for 10 minutes. Remove from the heat and allow to cool, then strain and bottle.

2. To make the cranberry syrup, place the juice and sugar in a saucepan and simmer until the sugar has dissolved. Remove from heat, allow to cool then bottle.

3. To make the daiquiri, shake the rum, syrup and lime juice in a cocktail shaker with the ice, then strain into a coupe glass. Add the mulled wine and garnish with lime zest.
