This is my grandmother's recipe and it trumps all the frikkadels I've enjoyed thus far! It contains at least one of your five a day and is so cheap to make. Ncinci's clever tip: add a couple of slices of milk-soaked bread. It adds succulence and bulks up dish, which means more meatballs!

Ingredients

Method
  • 500 g lean beef mince
  • 2 large carrots, grated
  • 1 large potato, grated
  • 1 onion, finely chopped
  • 10 g parsley, chopped
  • 2 T steak rub
  • 2 slices white bread
  • ½ cup milk
  • 4 T canola oil

1. Combine all the ingredients except the bread, milk and oil. Mix well using your hands.

2. Place the bread on a saucer and pour in the milk in allowing it to soak into the bread. Break it up and add to the mince.

3. Flour a surface. Shape the mixture into bite-sized balls and place on a baking tray.

4. Heat the oil in a pan. Fry the frikkadels until golden brown and cooked all the way through, about 5 minutes. Serve with pasta, or mashed potatoes and veggies.
