Frixuelos with apple filling

Ingredients

Method
  • 2 Free-range eggs
  • 250 g flour
  • 1½ T oil
  • 2 cups milk
  • 1/2 T sugar, plus extra for sprinkling
  • 1 pinch salt
  • Butter, for frying
  • For the filling:

  • 3 red apples, cooked
  • 1 t ground cinnamon
  • 1/4 t ground nutmeg
  • 1 lemon, zested
  • 15 g butter, melted
  • 1 T sugar

Mix the flour, oil, milk, sugar and salt in a food processor.

Heat a small frying pan and melt a little butter. Pour in a small amount of batter, making sure it covers the entire pan. When the sides begin turning upwards, turn and fry for another minute. Keep warm until ready to fill.

To make the filling, peel and mash the apples. Combine the apples, cinnamon, nutmeg, lemon zest and melted butter.

Add the sugar – you may want to adjust how much you add depending on the sweetness of the apples. Mix well.

Fill the frixuelos, roll up and sprinkle with sugar.

Cook’s note: Frixuelos, as the Asturians call crêpes, is a popular dish in the coastal region of Spain.
