Gammon with jammy cherry sauce

- 1.7 kg Woolworths medium gammon
- 8–10 cloves
- brown sugar For the jammy cherry sauce:
- 250 g fresh cherries, stoned
- 80 g caster sugar
- 4 T red wine or cherry liqueur
- 1 t balsamic vinegar
- 1 t lemon juice
Method
Ingredients
1. Preheat the oven to 180°C. Place the gammon in a large saucepan and cover with water. Add the cloves and bring to a gentle boil, then simmer for 1–1½ hours, depending on its size. Remove the gammon from the saucepan and allow to cool slightly, then score the fat and sprinkle with brown sugar. Roast for 20–30 minutes, or until caramelised and golden.
2. To make the cherry sauce, combine the cherries, sugar and red wine or cherry liqueur in a small saucepan. Simmer gently for 10–15 minutes until the cherries break down and the sauce thickens slightly. Stir in the balsamic vinegar and lemon juice, taste, and adjust the sweetness or acidity if necessary.
3. Serve slices of roast gammon drizzled with the jammy cherry sauce.
