- 250 g Woolworths pink seedless grapes
- 3 T chutney
- 3 baguettes, halved lengthways
- 150 g Woolworths medium-fat butter with garlic and herbs, melted
- 200 g Woolworths grated Gouda
- 150 g Woolworths 10 month-matured Gouda, sliced
- 180 g Woolworths roasted cherry tomatoes
- 250 g Woolworths grated mozzarella
- 280 g Woolworths grilled artichokes
- 70 g Woolworths coppa
- 200 g Woolworths mature grated Cheddar
- 150 g Woolworths extra-mature Cheddar, thickly sliced
- sea salt and freshly ground black pepper, to taste
- 90 g Woolworths pickled red onion petals, for serving
- 5 g fresh basil, for serving
Method
Ingredients
1. Preheat the oven to 200°C. Toss the grapes in the chutney and roast for 5–8 minutes, or until sticky and slightly charred.
2. Place the halved baguettes on a large baking sheet and brush generously with the garlic butter.
3. Layer one half of each baguette with the different toppings: grated Gouda, sliced 10-month matured Gouda, roasted cherry tomatoes, grated mozzarella, artichokes and coppa. Lastly add the mature grated Cheddar, extra-matured sliced Cheddar and chutney-roasted grapes.
4. Season with salt and pepper, close the sandwich and wrap in tinfoil.
5. Braai over medium hot coals for 10–15 minutes, or until the bread is toasted and crispy and the cheese gooey.
6. Slice thickly and serve immediately with the pickled onions and fresh basil.
