Lamb rack with Maille wholegrain mustard mashed potato

Method-
For the mashed potatoes:
- 3 potatoes, peeled, cubed and washed
- 1 t Maille wholegrain mustard
- 1 t butter
- sea salt and freshly ground black pepper, to taste For the lamb rack:
- 800 g rack of lamb
- 1/2 t garlic-and-herb seasoning
- 1 t fresh rosemary, finely chopped
Method
Ingredients1. Place the potatoes in a saucepan of cold salted water over a medium heat and slowly cook until tender. Drain, then return the potatoes to the pan, cover and allow to steam off the heat.
2. Add the Maille wholegrain mustard and butter to the potatoes and mash until smooth, then season.
3. Rub the lamb rack with the spice and herbs. Place the lamb in a pan, fat side down, and sear for 3–5 minutes over a high heat, or until crisp and golden. Transfer to a roasting pan and roast for 18–20 minutes at 180°C, or until cooked to your preference. Serve with the mashed potato.
