Ingredients

Method
  • 2 squares focaccia
  • 4 T extra virgin olive oil
  • a few spoonfuls Lello’s 100% pistachio paste (or make your own, see cook’s note)
  • 300 g mortadella, very thinly sliced
  • 2 burrata balls
  • Maldon salt,to taste

1. Slice the focaccia in half and drizzle both sides with extra virgin olive oil. Spread a spoonful of pistachio paste onto the focaccia.

2. Fold the mortadella in layers, place onto the focaccia and top with a ball of burrata. Drizzle over another dollop of pistachio paste and sprinkle with salt. Top with the remaining piece of focaccia and serve.

Cook’s note: To make your own pistachio paste, blend 300 g shelled, roasted pistachios, sea salt to taste, and enough extra virgin olive oil to loosen the mixture until a thick paste forms. Allow the burrata to stand at room temperature for about 30 minutes before using. This allows for a better flavour and eating experience.

I have tried 3 Woolies stores and online to buy Mortadella since it was launched some weeks ago. If I could find it, I would love to try your recipe. Nancypj
