- 4-6 large potatoes
- 2 T olive oil
- sea salt and freshly ground black pepper, to taste
- 85 g Woolworths smoked spicy salami sticks, chopped
- 85 g Woolworths pepperoni salami sticks, chopped
- 100 g Woolworths Blue Rock cheese
- 2 cups Woolwortsh Grated Mature Cheddar Cheese
- 2 leeks, sliced
- 2 T olive oil
- 100 g butter
- 1-2 fresh bay leaves
- 1 lemon, juiced
- Woolworths pickled red onion petals, for serving
- chilli flakes, for serving
Method
Ingredients
1. Place the potatoes in a roasting pan and make 4–5 incisions into each one, taking care not to slice all the way through.
2. Drizzle with olive oil and season. Roast in a preheated air-fryer at 180°C for 15–20 minutes, or until half-cooked.
3. Mix the salami sticks with the cheese and leeks. Combine with the olive oil.
4. Spoon into the potatoes, then return to the air-fryer for a further 5–8 minutes, or until the cheese has melted.
5. Heat the butter and bay leaves in a small pan. Swirl until foamy and nutty. Add the lemon juice, then pour over the potatoes.
6. To serve, top with the pickled onions and chilli flakes.
