Stone fruit burrata salad

This salad combines fresh peaches, plums or nectarines with creamy burrata, fresh herbs, and a spicy ’nduja dressing. A simple yet elegant summer dish that’s packed with flavour.

Ingredients

Method
    For the dressing:

  • 1 clove garlic, minced
  • 1 red onion, grated
  • 2 T red wine vinegar
  • 3 T olive oil
  • 1 T Woolworths ’Nduja Paste
  • 1 red chilli, chopped
  • For the salad:

  • 6-8 stone fruit (peaches, plums or nectarines), pitted, sliced and quartered
  • 2 x 125 g tubs Woolworths Burratina Mozzarella
  • 1 handful fresh mint, roughly torn
  • 1 handful fresh parsley, chopped
  • 180 g pitted green Manzanilla olives
  • Maldon sea salt and black pepper, to taste

Method

Ingredients

1. Make the dressing by whisking together the garlic, onion, vinegar, olive oil, ’nduja paste and chilli.

2. Plate the stone fruit with the torn burrata, mint and parsley.

3, Season with salt and pepper, drizzle the dressing over the salad and serve.
