If you love good tuna melt, as I do, the umami scores here are off the charts. Use good-quality jarred tuna for the best results. This is a quick and easy store cupboard snack that still feels special.

Ingredients

Method
  • 250 g jarred or canned tuna in oil
  • 1 small garlic clove, finely minced or grated
  • 1 t peeled and finely grated ginger
  • 2 spring onions finely chopped
  • 4 T Woolworths Miso Tasty white miso
  • unsalted butter, for the bread
  • 8 slices of sourdough, or your favourite type of bread
  • 200 g Cheddar cheese, grated
  • a little oil, for the griddle (grill) pan (optional)

Method

Ingredients

1. Simply put the tuna, garlic, ginger, spring onions and miso into a small bowl and mix thoroughly. Butter the bread on both sides and then spread the tuna mixture on one side of half the bread slices. Now layer the cheese generously over the tuna. Top with the pieces of plain buttered bread.

2. Place each sandwich on a lightly oiled, preheated hot griddle pan over a medium-high heat, pressing down and cooking for 2 minutes on each side before serving, or simply use a toasted sandwich maker. The cheese should be melted and dripping before serving.

TIP: If you have some of the tuna mix left over, whizz it up into a smooth pâté in a food processor and serve in ramekins with toasted bread, pickles and raw vegetables for a light snack or starter.
