The House of Machines old-fashioned

10 minutes“An iconic cocktail that never goes out of style; the old-fashioned brings together bourbon, simple syrup and bitters in perfect balance. This version serves four, each drink garnished with a lemon wedge and fennel frond for a bright, aromatic lift. Pair with fresh melon and salty sheep’s-milk feta drizzled with honey for a refreshing aperitivo moment.”– Roscoe Ahrendse, general manager at

Ingredients
Method
- 5 T blended bourbon
- 1 T organic maple syrup
- large craft ice cubes
- 5 drops Angostura bitters
- orange or lemon slice, to garnish
- fennel frond, to garnish (optional)
Method
Ingredients
1. Place the bourbon and maple syrup in a mixing beaker. Add 1 block of ice and stir for 15 seconds.
2. Burn white oak and smoke the glass for 10 seconds, then pour the liquid into the glass over another cube of ice.
3 Add the bitters and garnish with the orange or lemon.
Pairing: Top cubes of fresh melon with a small piece of Woolworths’ sheep’s-milk feta. Drizzle lightly with honey.
Cook’s note: Garnish the drink with fennel fronds too, if you like. The sweet melon and honey balance the salty feta and beautifully mirror the old-fashioned’s bittersweet notes.
