Ingredients
Method- 2 T canola oil
- 1 medium onion, diced
- A pinch of garlic powder
- 1 T curry powder
- 1 t dried mixed herbs
- 1 t paprika
- 1 x 1.1 kg Woolworths Easy to Cook Free Range Chicken Umleqwa, portioned (reserve the broth)
- 1 t chicken stock powder dissolved in 1 cup boiling water
- freshly ground black pepper, to taste
- 2 x 410 g cans Woolworths samp and beans, heated and seasoned
Method
Ingredients1. Heat the oil in a large heavy-based saucepan over a medium heat and add the onion. Sauté until soft and slightly browned.
2. Add the garlic powder, curry powder, mixed herbs and paprika, stirring frequently to prevent the spices from sticking to the pan.
3. Add the portioned umleqwa, with the broth from the package, and stir through. Reduce the heat, cover and cook for 5 minutes.
4. Add the chicken stock and stir through. Season with black pepper, cover, and cook for 20 minutes until the umleqwa is tender. If the gravy is still runny, increase the heat and reduce until slightly thicker.
5. Serve with samp and beans, steamed bread or pap.
Cook’s note: Serve with starch and vegetables.
