Think Sunday roasts are a thing of the past? You’ll think twice after sinking your teeth into any one of these mouthwatering roasts. Hannah Lewry shares five of her favourites, from a beef and pork to vegetarian
I think I love roasts so much because they remind of me Sundays, a long lazy day where you can put a roast into the oven in the morning or early afternoon and a few hours later a mouthwatering meal full of flavour and the best fall-off-the-bone meat ever! It’s all about the luxury of time. Here are my absolute must-make roasts.
THE ULTIMATE VEGGIE ROAST
Whether you are vegetarian or not this is a must-try. Roasting the pumpkin whole like this makes for a beautiful thing to eat and bring to the table. I would really honour it by not serving any meat with it. Keep it simple and the flavours will do all the talking for you.
THE ULTIMATE CHICKEN ROAST
I love a one-tray bake and this is one of the best you will ever make. With delicious contrasts in flavour, from salty to zesty oranges and crispy serrano ham and those creamy butter beans, it really is exciting on the palate. Cook’s tip: use ordinary orange if you cant find cara cara oranges and if you aren’t a fan, lemons will do just as well.
THE ULTIMATE LAMB ROAST
This really is a showstopper when brought to the table adorned in vibrant pomegrante rubies and electric green mint leaves. The harissa adds a wonderful flavour but if you can’t get your hands on any try to make your own, it’s really worth having in the fridge! Try this recipe for rose harissa – omit the rosebuds if you like but add them if you are feeling adventurous.
THE ULTIMATE PORK ROAST (WITH A TWIST)
Everyone has their own go-to recipe for the perfect roast pork belly so I thought I would share this Abigail’s idea for slow-roasted, authentic, Mexican-style pork. Tacos make it the perfect crowd-pleasing, sharing dish – perfect for those winter nights in with friends.
