  • 350 g Woolworths Roma or mini San Marzano tomatoes
  • 1 cup cream
  • 4 garlic cloves, crushed
  • 3 fresh thyme, sprigs
  • Sea salt and freshly ground black pepper, to taste
  • 4 T extra virgin olive oil

Method

Ingredients

Preheat the oven to 180°C.

Score the bottoms of the tomatoes and place them in an ovenproof dish.

Pour over the cream and scatter over the garlic. Add the thyme and season to taste.

Drizzle over the olive oil, then bake for 30 minutes, or until the tomatoes are slightly charred and soft and the cream has reduced to form a thick sauce. Serve immediately.
