The beloved lockdown dalgona coffee has been updated! Now people are chilling it, and honestly we're here for it. We tested the trend to make this iced dalgona coffee mousse.

Ingredients

Method
  • 100 g ½ cup WW Italian Blend Instant Coffee
  • 80 g ¼ cup Demerara Sugar (or 60g regular brown sugar)
  • ½ cup Boiling water
  • Milk or Whipped Cream, to serve

1. In a bowl combine coffee, sugar and boiling water.

2. With an electric whisk, beat until double in size and light caramel in colour.

3. Freeze for a minimum of 6 hours. For a more mouse-like texture, place frozen coffee in the refrigerate for 15 minutes before scooping.

4. Scoop and top with your favourite milk.
