Ingredients

Method
  • oil, for sautéing
  • 3 large onions, cut into rings
  • ½ green pepper, cut into strips
  • 2 star anise pods
  • 2 cardamom pods
  • 2 bay leaves
  • 2 cinnamon sticks
  • 1 t cumin seeds
  • 1 T tandoori masala spice
  • 1 T roasted masala
  • 1 T mother-in-law spice mix
  • 3 large tomatoes, peeled and grated
  • 4 cloves garlic, chopped
  • sugar, to taste
  • salt, to taste
  • fresh coriander, a handful, chopped
  • 10 free-range eggs, hard-boiled
  • white rice, for serving

Method

Ingredients

1 Heat the oil in a pan and sauté the onions, green pepper and whole spices until fragrant.

2 Add all the dry spices and a splash of water and cook for about 3 minutes.

3 Add the tomatoes and garlic and cook until the mixture forms a thick sauce. Add more water if necessary. Add sugar and salt to taste and stir through. Add the coriander.

4 Place the whole boiled eggs in the sauce and allow to warm through.

5 Time to eat, family! Serve with fluffy white rice.
