Prawn cocktail cups and garlic mussels with toasted baguette

Ingredients
Method
- Woolworths Crunchita lettuce, rinsed and dried
- radicchio, rinsed and dried
- 1 x 200 g tub Woolworths classic prawn cocktail
- 1 x 200 g tub Woolworths spicy prawn cocktail
- fresh dill or parsley, chopped, to garnish
- 1 x 500 g pack Woolworths frozen mussels with garlic-and-herb butter
- 1 T baby capers, drained
- 1 French baguette, sliced and toasted
Method
Ingredients
1. Arrange the Crunchita and radicchio leaves on a large platter or plate.
2. Fill each leaf with a spoonful of the classic or spicy prawn cocktail. Garnish with fresh herbs.
3. Heat the mussels according to package instructions. Spoon the mussels and their buttery sauce into a shallow serving bowl.
4. Top with baby capers and more herbs and serve immediately with slices of toasted baguette.
Cook’s note: Finish both dishes with lemon zest or a squeeze of lime for extra flavour.
