40 minutesEasy paella with a basic spice mix, and a few Woolworths favourites! Use chicken for a weekday family meal, and try adding 4 T ‘ndjua paste instead of chorizo sausage.

Basic spice mix (makes 145 g):
- 2 T ground cumin
- 2 T ground coriander
- 2 T ground turmeric
- 2 T garlic powder
- 2 T paprika
- 2 T cayenne pepper
- 2 t salt
- 2 t ground black pepper For the paella
- 2 T olive oil
- 1 onion, chopped
- 1 red pepper, seeded and chopped
- ½ chorizo sausage
- 200 g risotto rice
- 2 T spice mix
- 1 t Woolworths Cajun seasoning
- ½ t Woolworths saffron
- 4 garlic cloves, crushed
- 400 ml chopped tomatoes
- 2 T tomato paste
- 3-4 cups chicken stock
- 2 skinless free-range chicken breasts
- 200 g shelled raw prawns
- 200 g mussels
- 100 g peas
- Italian parsley, chopped, for serving
- lemon wedges, for serving
Method
Ingredients
1 Heat the oil in a large frying or paella pan. Add the onion and slowly cook over a low heat until soft. Add the pepper and chorizo and cook for 3 minutes.
2 Add the rice, spice mix and saffron and cook for 1 minute. Add the garlic, tomatoes, tomato paste and stock. Simmer for 20 minutes or until the rice is just cooked.
3 Add the chicken, cover and simmer for 10 minutes. Add the seafood and cover, cook for 4 minutes. Serve with parsley and lemon wedges.
Cook's note: The basic spice mix is versatile! Add any other Woolworths spices to zhoosh up the flavour. Here, we used Woolworths saffron and cajun seasoning.
