4 simple sauces for unspeakably delicious pasta
It’s already a weeknight standby, but get over the mac n cheese habit, buy some fresh pasta (it’s worth it) make these simple sauces and you’ll be up for homemaker of the year
THE BASE
Cook 2 x 250 g packets Woolworths fresh pasta according to package instructions to serve 4.
1. CREAMY HERB, GRUYÈRE AND LEEK SAUCE
This also amps up the flavour of mac and cheese and is delicious with fish.
SOFTEN 200 g sliced baby leeks, 2 cloves chopped garlic and 1 t thyme in 1 T olive oil. Add 2 cups cream, simmer for 10 minutes, add grated Gruyère and season.
2. CHERRY TOMATO-AND-BACON SAUCE
A fantastic partner with chicken or tossed with blanched green beans.
PAN FRY 250 g diced streaky bacon in 1 T olive oil until golden. Add 500 g halved cherry tomatoes, 3 cloves sliced garlic, 1 diced chilli and season to taste. Fry for a further 2 minutes.
3. BROCCOLI PESTO
Serve with grilled chicken or steak to add some hidden veggies.
BLEND 300 g blanched and drained broccoli florets with 2 cloves garlic, the juice of 1 lemon, 40 g grated Parmesan, 30 g basil, ½ cup olive oil and season to taste.
4. SMOOTH PUMPKIN-AND-SAGE SAUCE
ROAST 1 kg diced pumpkin with 1 t sage leaves, 2 T olive oil and 4 cloves garlic until tender. Blend with ½ cup chicken or vegetable stock, 2 T crème fraîche until silky smooth and season to taste.
