Easy as pie: 7 gluten-free treats to whip up this weekend
Because: everyone deserves a slice of the pie, literally. We present seven of our current favourite (and easiest) gluten-free sweet treats and pudding recipes to help you satisfy your sweet tooth this weekend.
COFFEE ICE-CREAM WITH HOKEY POKEY
Who knew these three simple ingredients could create a bubbly, crunchy and super-satisfying honeycomb? This recipe only gets better when topped with home-made coffee ice-cream and drizzled with butterscotch sauce.
COCONUT-AND-VANILLA SAGO PUDDING
This nutty sago pudding is pure comfort in a bowl (and the best part is topping it with freshly whipped bronzed peaks of Swiss meringue). It’s also good to know that this sweet treat is not only gluten-free but dairy-free, too.
VERY BERRY ICE-CREAM PIE
This (easy as) pie base features almonds and cocoa nib granola, Medjool dates and a spoonful of peanut butter and only gets more delicious when topped with frozen yoghurt and the season’s freshest berries. Want to see how it’s done? Watch this 10-minute recipe here.
POLENTA-AND-LEMON SLICE
Bright, fresh, zesty and gluten-free all at the same time. This citrusy treat is a real crowd-pleaser. The polenta adds a lovely crumbly texture and is delicious served with black coffee (and mascarpone for when you want to indulge).
CHOCOLATE, MATCHA AND PISTACHIO ICE-CREAM PIE
It’s all a bit matcha. The powdered green tea has taken the world by storm, and doesn’t seem to be disappearing any time soon. If you love the earthy, herbaceous flavour of green tea, this recipe is for you!
SWEET POTATO MALVA PUDDING
If a traditional malva pud and an American sweet potato pie had a love child, this would be it. Don’t fret, this recipe still features all the traditional flavours you know and love, it's just a little bit different. Plus, using sweet potato in a malva pudding means you can use less sugar, too!
TOFFEE, BANANA AND COCONUT OPEN PIE
Crazy about coconut? We certainly are. This easy open pie recipe features overripe bananas, desiccated coconut (and coconut flour) and a quick home-made caramel sauce. And did we mention it can be all yours in 35 minutes – tops?
SWEET POTATO BROWNIE LOAF
Brownie lovers this is for you! If you love a traditional brownie but need to try a different version, may we suggest this one? This version has a lovely earthy flavour (because of the chickpea flour). You’ll also love the dense, cake-like texture, too.
