Spring onion pancakes

1. Mix 4 mashed potatoes, 1 free-range egg, 50 g flour, 1 clove crushed garlic, 2 sliced spring onions and season to taste.
2. Shape into rounds and pan-fry until golden brown.
3. Serve with sweet chilli prawns, sliced radish and Woolworths’ coriander-and-lime pesto.
