Grilled mackerel toast with parsley salad

Ingredients

  • 1 can Woolworths grilled mackerel fillets in canola oil 
  • 30 g parsley, chopped 
  • 1 red onion, thinly sliced  
  • sea salt and freshly ground black, to taste 
  • 4 slices rye bread, toasted 

Method

1. Remove the fish from the tin, reserving the oil.

2. In a bowl, mix the parsley and onion. Season and drizzle with the canola oil from the tin.

3. Spoon the salad onto the toasted bread and top with the fish. Season with black pepper.
