Apple pie-inspired overnight oats

Think of these overnight oats as the summery version of your favourite apple pie. Cinnamon and honey add the classic sweet flavours that pair so wonderfully with apples, which are mixed with oats and milk and soaked overnight. Tuck in at home, or grab and go on busy mornings.

Ingredients

Method
  • 100 g oats
  • 4 T chia seeds
  • 5 T local honey
  • 2 x 350 ml bottles Ayrshire low-fat high-protein milk
  • ½ t salt
  • cinnamon, to taste
  • For the cinnamon apples:

  • 3 Granny Smith apples (or any seasonal apple), peeled and cubed
  • 1 T ground cinnamon
  • 2 T water
  • 1 T honey or Woolworths erythritol and stevia blend sugar

1. Mix the oats, chia seeds, honey, milk and salt in a mixing bowl. Divide between 4 serving glasses or portable containers. Chill overnight to set.

2. To make the cinnamon apples, place the apples, cinnamon and water in a microwave-safe bowl that has a lid. Microwave at 2-minute intervals, until the apples are soft and cooked through. Stir in the erythritol and stevia sugar, mixing until the sugar has dissolved.

3. When ready to serve, remove the oats from the fridge and top with the cinnamon apples.
